
Ingredients
100g salad greens
225g Halloumi
50g stuffed green olives
50g Kalamata olives
½ red onion, thinly sliced
50g each of red, green and yellow capsicum, chopped
200g cherry tomatoes, sliced in half
1 small cucumber, seeds removed and chopped
Dressing
6 Juice of one lemon
Zest of one lemon
½ cup olive oil
2 garlic cloves
Pinch of sea salt
Method
Slice the halloumi into thick slices and rub each side with olive oil.
Place all the dressing ingredients into the Cordless Go Hand Blender jug and blend until smooth, set aside.
Heat a grill plate over a high heat, when hot grill the halloumi on each side for 2 minutes until browned.
Place salad greens into a salad bowl and top with all remaining salad ingredients, except halloumi.
Arrange the halloumi on the top of the salad. Pour the dressing over the salad when ready to serve.
