226 grams mozzarella, grated
Handful of fresh basil leaves, torn
2 (400 grams) cans of whole peeled tomatoes
Method

Prepare the Dough: After following the our Pizza Dough recipe the next step is to roll out the dough on a lightly floured surface to your desired thickness. Transfer the rolled out dough to a pizza pan or baking sheet lined with parchment paper.

Preheat the Diavolo Oven: Preheat a Diavolo oven, ideally heating it for 15 minutes before cooking.

Prepare the Tomato Sauce: Add tomatoes to a food processor and process until smooth. Season with salt.

Shape the Pizza: Using your fingers, spread and shape each dough ball into a pizza shape. Avoid using a rolling pin as it can kill the yeast and ruin the texture of the pizza.

Assemble the Pizza: Spread 1/3 of the tomato sauce onto each pizza dough, leaving a 2.5cm border for the crust. Sprinkle 1/3 of the grated mozzarella over the sauce.

Bake the Pizza: Using a pizza peel, transfer the assembled pizzas onto the floor of the pizza oven. Bake until the crust is golden and crisp, approximately 60 seconds.

Serve: Once baked, remove the pizzas from the oven. Top each pizza with torn basil leaves for extra flavour.
Note: Adjust the toppings and seasoning according to your preference.
